When toasting coconut, the flavour changes, becoming much more nutty and complex. Toasted coconut
Heat a pan to 190 ºC. Add desiccated coconut and stir occasionally until the coconut turns a lovely golden colour. Transfer the toasted desiccated coconut onto a piece of parchment paper to cool down. If you leave it in the pan, the residual heat may continue to toast the coconut and it could become too dark.
