A chicken salad great for use in a brioche sandwich. This recipe is good for about 4-5 sandwiches.

Spicy Chicken Salad
Ingredients

450gChicken breast without skin
50gCucumber
Salt, as needed
2tsp.Sugar
175gMayonnaise
30gScallions
40gSushi ginger
2tbsp.Miso, soy paste
1tsp.Soy sauce
2tsp.Sesame seeds, whole, dried
1tbsp.Sichuan pepper flakes
2tbsp.Sriracha
2tsp.Japanese Rice Vinegar
1tsp.Oil, sesame
Instructions

Prep chicken
Salt each chicken breast well on both sides, and let rest on a wire rack for 15-20 minutes

Prep veggies
Chop scallions, cucumbers and sushi ginger. Season the cucumbers with a pinch of salt and suger, and let cure for 15 minutes. Put all in a stand-mixer bowl.

Poach chicken
Add water and 1 tbsp of salt to a pot. Poach the thicken for 20 minutes, until internal temp has reached 75c

Combine and mix
Dice the cooked chicken. Mix all indgredients in the stand-mixer bowl, and stir for 45 seconds until combined.
