1tbsp.Olive oil
2pcs.Red onion
1pcs.Chili
1pcs.Garlic cloves
Fresh coriander, as needed
800gCrushed tomatoes
1tsp.Sugar
4pcs.Eggs
Feta cheese, as needed
1tsp.Ground cumin
1tsp.Paprika

Prep veggies
Finely chop onions, garlic and chilli

Add veggies, fry
Pour the olive oil into a pan along with the spices, and fry the veggies for 5 minutes until soft.

Add tomatoes and sugar, simmer
Add the canned tomatoes and the sugar, stir to combine. Let simmer for 8-10 minutes.

Add eggs and finish off
Make 4 dips in the sauce using a spoon, then crack an egg into each one. Add feta cheese (optional). Put a lid on the pan, and let cook for 6-8 minutes. Add chopped coriander or other herps. Serve with bread.
