We have experimented with what temperatures are best for cooking different types of sausages. And we found one temperature that is good for all sausages, you only need to adjust the cooking time according to the thickness of the sausage. Sausages become dry, gritty and crack if the core temperature exceeds 65 ºC. Therefore, we have tested how long sausages of different thicknesses should be cooked in a pan at 150 ºC to obtain a core temperature of 65 ºC. Pre-heat a pan

Set the pan to 150 °C and add a knob of butter. The fat helps the sausages to heat up more evenly. You can also use oil.

Thin sausages

Thin sausages, sausages such as hot dogs, should be fried for 10 minutes in total. Fry for 5 minutes on one side, flip and fry for another 5 minutes.

Thick sausages

Thick sausages that are pre-boiled, should be cooked for 20 minutes in total. Fry for 10 minutes on one side, flip and fry for another 10 minutes. Alternatively, you can turn them every 5 minutes, giving them 4 x 5 minutes.

Raw thick sausages

Raw thick sausages should be cooked for 30 minutes in total. Turn them a few times during cooking so that they are evenly cooked on each side. Try turning them every 5 minutes.
