Port wine glaze or port wine syrup is really just port wine and sugar reduced down. Simple but super flavorful, perfect for glazing meat, as it adds a nice sweetness and a depth of flavour to the meat.

Port wine syrup
Combine the port wine and sugar in a pan. Set the temperature to 115ºC and stir briefly until the sugar has dissolved. Then allow the syrup to reduce by half, this will take about 15 minutes. It should become a thick and slightly sticky syrup that easily coats a piece of meat. Pour the syrup into a sterilized jar or bottle.
Tips for this recipe
Use the syrup to glaze pork cheeks, neck chops, pork belly or other meat. Or try it in cakes, desserts or with ice cream.
