Halloumi is a firm, salty cheese known for its unique ability to retain its shape when fried or grilled. Unlike most other cheeses, halloumi develops a crispy and golden crust when fried, while maintaining its firm texture without melting. With temperature control, achieving the perfect golden crust on your halloumi is easy. Fried halloumi makes a delicious topping for salads, as showcased in this recipe, or can be used as a filling in sandwiches, pita bread, or burgers.

75gRocket salad
250gCherry tomato
50gOlives, black, without stones, in brine
1pcs.Avocado

Fried Halloumi

400gHalloumi
Pepper, freshly ground
Paprika, ground
Salt, , can be omitted
Oil, for frying

Make the dressing

Finely grate the lemon and place the zest in a bowl. Squeeze the lemon juice into the bowl. Add the olive oil and honey, then mix well. Finally, season to taste with salt and pepper.

Prepare the vegetables

Rinse the rocket and place it on a platter. Next, rinse the tomatoes, cut them in half, and sprinkle them over the rocket. Halve the olives and sprinkle them over the salad. Then, cut the avocado in half, remove the stone and peel. Dice the avocado and toss it in the dressing. The lemon in the dressing prevents the avocado from turning brown. Spread the avocado over the salad and pour the dressing over.

Fry the halloumi

Cut the halloumi into slices about ½ cm thick. Sprinkle pepper, paprika, and salt on both sides of the halloumi slices. The halloumi is quite salty on its own, so you may not need to add salt. Heat a large 28 cm pan to 170 ºC and add a little oil. Fry the halloumi on each side for 1-2 minutes until golden and crispy. If your pan isn't big enough to accommodate all the slices at once, fry them in two batches. Spread the halloumi over the salad and serve.

Tips for this recipe

If you want to make the salad a complete meal, you can cook some quinoa or bulgur. After cooking, let it cool and mix it with the rocket on the salad plate. Alternatively, you can serve the salad with homemade flat bread, focaccia, pita bread, or a good sourdough bread. You can omit seasoning the halloumi with ground paprika and instead just use pepper and salt, or replace the paprika with dried oregano or basil.
