Beurre Monté is a delicious sauce made mainly of butter. A liquid, often water, is added to the butter, which makes it thicker and creamier. A delicious sauce for vegetables and fish. A Beurre Monté is usually very difficult to make because it requires a very precise temperature. Temperature controlled cooking makes it much easier to make this delicious sauce, as the temperature is automatically kept at the right level.

100gSalted butter, (diced)

Emulsify the butter

Heat a saucepan or frying pan to 75 °C. Add the water. Whisk in the butter, starting with one cube at a time. Once the sauce has emulsified, you can add more butter cubes at a time. Continue until all the butter is added and incorporated.

Tips for this recipe

You can replace water with lemon juice, wine, béarnaise essence, etc. to give the sauce a slightly different flavour.
