100gSalted butter, (diced)

Emulsify the butter
Heat a saucepan or frying pan to 75 °C. Add the water. Whisk in the butter, starting with one cube at a time. Once the sauce has emulsified, you can add more butter cubes at a time. Continue until all the butter is added and incorporated.
Tips for this recipe
You can replace water with lemon juice, wine, béarnaise essence, etc. to give the sauce a slightly different flavour.
